Banana bread recipes - this one always works well for me:
- heat oven to 180C. - spray/grease loaf tin. - sieve 200g of self-raising flour and 1/4 tsp of bicarbonate of soda together in a mixing bowl. - melt 75g of butter/margarine in the microwave (about 20s usually does it!); mix in 75g of white sugar and 1 level tbsp honey. - beat 2 eggs in a bowl and gradually add them to the butter/sugar mix, beating well the whole time. - gently stir this mixture into the flour until it all comes together. - mash 2 bananas (old manky ones work quite nicely!) in a bowl, then stir into the cake mix. - spoon mixture into greased loaf tin; sprinkle top with sugar and powdered cinnamon. - bake for 1 hour.
