I wasn't sure what a roasting tin was, so it's taken me awhile to figure out how this came together, but let's see if I'm right: you have a large, rectangular pan/tin with sides a couple of inches high or so and just one big space in the middle, not individual square-shaped openings... you filled the pan with paper muffin cups squashed in next to each other, and they came out large and square?

I like it! And the muffin looks delicious. Did it solve the burning problem?

Yup, that's exactly what I did! I can't find my muffin tin right now, so I've just got a big rectangular pan - like you'd roast a chicken in - and dropped the cases in there. Because the muffins spread as they cook, they butt up against each other and expand to fill the space available, which means they come out square!

This is a different recipe, so no burning this time. I made one version from the internet (these) and one recommended on a previous post, so we'll see which are tastier :)

Okay, you have just taught me that I can still make muffins even though I don't have a muffin tin! And then I thought about making banana muffins instead of banana bread, which is what I was planning to make, and lo and behold, that is what you made. Cool.

Woot! Make sure you use a deep pan, though or they all spread out and possibly over the edges!
